Sodium Pyrophosphate, also called Tetra Sodium Pyrophosphate or TSPP. White powder or crystal. Melting point 80℃. Density 2.53g/mL. Tetrasodium Pyrophosphate (TSPP) can soluble in water but insoluble in alcohol. It’s aqueous solution is alkaline and stable below 70℃, hydrolyzes into sodium hydrogen phosphate after boiling. Tetrasodium Pyrophosphate (TSPP) can form complex with alkaline earth metal ion, liable to deliquesce.
Tetrasodium Pyrophosphate (TSPP) is mainly used in meat and seafood processing as a water retention agent, a stabilizer for natural pigments and to prevent fat corruption. Tetrasodium Pyrophosphate (TSPP) can also be used as a PH modifier, an emulsifier, a quality improver agent in dough and as a nutrient supplement.
