1. Product Description
It is white or colorless rhombic crystalline or prismatic crystal. It’s easily soluble in water, but insoluble in ethanol. The relative density is 1.63 and melting point is 34.6℃. If heated to 180℃, it may lose crystal water and convert to anhydrous.

In food industry, it is used as agent for baking to avoid oxidation stain and as emulsifier in dairy product to prevent egg white from solidification. It is also used as emulsifier and chelating agent for solid drinks.
